BIRYANI KA SAFARNAMA

Straight from the Shahi Palaces to every home in India.

The striking flavours of khade masale and the cooking technique of Biryani has been followed since ages. Biryani is admired by everyone but little did we try to learn about its history and origin.

Let us look at how we have moulded Biryani and made it a part of our own culture. There are three different accepted truths as to how this lavish and extraordinary dish made India its own.

  • Brought to India by Arab Traders and given this remarkable dish to the Southern Malabar Coast of India. In early 2 A.D, there have been traces found for a dish known as Oon Soru in Tamil Literature which was cooked to feed the military soldiers. This elementary dish has a very simple recipe: Rice, Ghee, Meat, Turmeric, Coriander, Pepper and Bay Leaf.
  • Persians passed this exceptional recipe of Biryani to Moguls (Mughals) and they further passed it onto Indians. Derived from the Persian word “Birian” which literally translates as “fried before cooking” and further word “Birinj” which translates as “rice”.
  • Rice prepared with meat chunks in the Earthen Pots at the camps of Taimur’s Army, a Turk-Mongol invader, when arrived at the gates of India contributed by providing this incredible dish to India, now called Biryani.

A varied Biryani history is what we have been presented with. Despite different origins, we all are united by a common ground and that is Biryani By Annie.

Biryani’s versatility in India is par excellence, we have multiple varieties of Biryani for different tastes. Hyderabadi Biryani, Awadhi Biryani, Kolkata Biryani, Sindhi Biryani, Malabar Biryani; all of these represent the diversity and culture of their respective states.

And you all, as Biryani lovers, would connect with the taste of Biryani with us.
